Whipped Cream Frosting

This is the birthday cake I made for a great granddaughter's 4th birthday. The whipped cream frosting is amazingly light and tasty. In order to keep the cake cool so the frosting wouldn't melt at her outdoor party, I set the cake on the lid from a plastic storage box — the plastic lid was sitting on top of a frozen gel pack.

Do you have a favorite recipe to share?

Whipped Cream Frosting

Ingredients:

       
  • 2 cups whipping cream
  • 1/4 tsp of salt
  • 1 tsp vanilla
  • 2 - 3 tbsp sugar
  • 1 tsp unflavored gelatin
  • 2 tbsp hot water
  • A few drops food coloring (optional)
Directions:

       
  • Combine whipped cream, salt and vanilla in a small bowl
  • Refrigerate bowl and beaters until well chilled
  • Meantime, dissolve gelatin in hot water, cool
  • Remove whipping cream mixture from refrigerator and beat until frothy
  • Add sugar one teaspoon at a time
  • Drizzle in dissolved, cooled gelatin
  • Continue beating until stiff
  • Add a few drops of food coloring, if desired
  • Frost cake and refrigerate
  • Makes 4 cups of the best tasting frosting, EVER!

Wait...you made THAT cake for a 4-yr-old's birthday? Holey schamoley! :faint I think my kid got little plastic Power Rangers on his cake for his 4th.


I won't be making the lovely roses any time soon, but I will try this frosting recipe! Maybe even this weekend. Thanks for sharing!

Yes, I did make that cake. ;D The recipe for the roses was my buttercream decorating frosting. It was extra challenging because my granddaughter won't allow her kids to eat food colorings...so I had to make my own food colorings from red cabbage (blue and purple — a pinch of baking soda turned 1/2 the purple to blue), crushed dehydrated strawberry powder (pink) and spinach (green).

Buttercream Decorating Frosting

Ingredients:

1 cup butter
1 1/2 cups powdered sugar
1/4 cup evaporated milk (w/1/2 tsp vanilla in the milk)

Directions:

Cream at high speed for 5 minutes
Color using paste food coloring (not liquid)
Wonderfully tasty and easy to use for piping decorations and borders on cakes
Place flowers made with this icing in the freezer on wax paper squares on cookie sheets
Once frozen the flowers become easy to handle and put onto cakes

Verla, that is amazing! I know this is a few months old, but just wanted to say that she is so lucky to have a Grandma to make such special cakes. What wonderful memory making.
